Sundried Tomato Sauce

This sauce is de-li-cious! It's super tasty, with rich, deep flavours, and my #1 easy, healthy sauce for when i want a quick dinner.

Not only is this sauce super healthy and quick, but it's super diverse. You could use this sauce as a pizza base, pasta sauce, meat sauce, to top french bread, or just about any way you could think.

Sun-dried Tomato Sauce

Ingredients
  • 5-6
    sun dried tomatoes*
    (rinsed of any oil)
  • 1/4
    cup
    fresh basil leaves
  • 1
    cup
    natural yogurt
  • 1
    tsp
    tomato purée
    (optional)

Instructions
  1. Using a food processor or blender (whichever you have to hand) all ingredients until smooth.

  2. You may need to add some milk/water to thin the sauce to your desired thickness

Recipe Notes

*I used to avoid buying sun dried tomatoes because the small pots are pretty pricey! But i found a large jar of them in Tesco's antipasti jar section which are only £2.50 -  great value 🙂
