These Banoffee Bailey Cheesecake Pots are the most delicious and easy-to-make desserts for any occasion – especially in during the festive period! They require no cooking, no baking and take about 10 minutes total time to make.

These simple dessert pots combine bananas, creamy baileys mascarpone, caramel sauce and crushed digestives – all topped with a generous grating of chocolate. Many of the ingredients are ones you’re likely to have in the house already.

I tend to serve these soon after making them so the biscuit keeps it’s texture but have served them the next day and they’ve been lovely, too!

How to make delicious Banoffee Bailey Cheesecake Pots

1. Begin by placing your 10 digestives (either chocolate – milk or dark, or plain) in a sandwich bag (the cleaner/easier way to do this), or on a chopping board covered in cling film

2. Then use a rolling pin to crush them into small crumbs and pieces

3. Next, to a large bowl add your mascarpone, icing sugar and baileys – and mix until it forms a smooth cream

4. Finally cut the 2 bananas into bite-sized slices, then you have all your elements ready for your banoffee baileys pots

5. Begin assembling your banoffee baileys pots by putting a layer of crushed biscuit into each pot

6. Then top this with some caramel sauce

7. Followed by a layer of the baileys mascarpone cream

8. And then add some slices of banana

9. Some more caramel sauce

10. And a final layer of the Baileys mascarpone cream – optional, if you have any chocolate in you can also grate some of this over the top for added decoration

  • 3 tbsp icing sugar
  • 6 tbsp baileys
  • 200g mascarpone cheese
  • 2-3 bananas
  • toffee or caramel sauce

To serve (Optional)

  • Grated chocolate
