Sausage stew is one of my go to mid-week dinners. It’s so comforting and something the whole family enjoys. A sausage stew is a little different to a sausage casserole, due to it being cooked in one pan on the hob – making it quick and easy, and the tidy-up is easier too.

This sausage stew recipe is flavoured with onions, garlic, paprika and tomatoes for a rich and delicious sauce. I tend to serve it alongside mash and some crusty bread, but it’s also lovely with peas and broccoli if you’d prefer.
How to make a classic sausage stew

1. Begin by preparing the veg – roughly chop the peppers and peeled onion, peel and crush the garlic cloves and make up your stock.
2. Then heat some oil in your pan over a medium heat
3. Add your sausages and brown on all sides – when they’re mostly browned and just one side needs more colour, add in the onions and cook for a further few minutes, browning that final side of the sausage and getting a little colour on the onions, too
4. Then, add in the crushed garlic, spices and peppers – then, stir to cook and cook for a further 2 minutes
5. Then, add in the tinned tomatoes and stock, bring to a boil then reduce to simmer.
6. Cook, uncovered, simmering for 20-40 minutes, or until the sauce has reduced to your liking (you can make your mash in this time if you’re serving it alongside). Stir often to ensure the sauce doesn’t stick. Then, serve and enjoy!
Easy Sausage Stew
A family classic - easy sausage stew. Made quickly on the hob for a mid-week treat, this sausage stew is flavoured with paprika and tomatoes.
Ingredients
- 1 tbsp vegetable oil
- 1 onion
- 6-8 sausages
- 2 cloves garlic
- 1 tsp paprika
- 1 tsp thyme
- 1 bell pepper
- 400g tinned chopped tomatoes
- 200ml chicken or beef stock
- 1 tsp sugar
To serve (optional)
- Mashed potatoes, crusty bread
Instructions
- Begin by preparing your vegetables - peel, then finely slice the onion
- Cut the pepper into bite-sized pieces
- Peel and crush the garlic cloves
- Make up 200ml of chicken or beef stock by combining your stock with boiling water
- Next, heat the oil in your pan on a medium heat
- Add in the sausages and onion - cook for 3-4 minutes on each side until the sausages are browned all over and the onions nicely reduce
- Next, add in the rushed garlic, paprika and thyme - stir and then cook for 1 minute more
- Finally, add in the tin of chopped tomatoes, stock and sugar - stir and bring to a simmer
- Simmer for about 20 minutes, stirring frequently - until the sauce has thickened and the sausages cooked through
- Then, it's all ready! Serve and enjoy - I love this with mashed potatoes and some nice crusty white bread
Notes
If you want to make this recipe veggie, simply swap the sausages and stock for veggie ones.
