How To Make Ginger Chocolate Chip Cookies At Home

Gingerbread Chocolate Chip Cookies
Gingerbread flavoured Millies style cookies with lots of chocolate chips!

Ingredients
- 130g butter, softened
- 100g light brown soft sugar
- 130g caster sugar
- 1 egg, lightly beaten
- 1 tsp vanilla extract
- 1 tsp ginger
- 1/2 tsp all spice
- 225g self-raising flour
- ½ tsp salt
- 200g chocolate chunks
Instructions
- Preheat the oven to 180C
- Cream together the butter and sugar
- Lightly beat the egg in a separate bowl, using a fork - until the yolk and white are mixed
- Add the egg, vanilla, ginger, all spice, salt and flour to the butter mixture
- Stir to combine into a thick smooth cookie dough
- Add the chocolate chips and stir to evenly distribute
- Line a baking tray (or two) with parchment paper
- Add tbsp sized balls of dough to the parchment paper, evenly spread out to allow space for them to spread as they cook (see photos above)
- Cook in the oven for 8-10 minutes (when they come out they may seem very soft, but they will get a little harder as they cool, you want them to remain a little soft when cooled
