These turkey quesadillas really are the ultimate guilt-free treat. Each triangle has under 120 calories each and are jam-packed with lean protein in the form of turkey and beans! Perfect served simply with lettuce and your favourite Mexican dips (I chose guacamole and sour cream).
Baking these quesadillas means they’re not only easy to cook (they crisp up whilst you do the dishes, and don’t need to watch them!) but they’re also a lot healthier than traditionally fried quesadillas.
I cook these quesadillas all-the-time. They’re great as a mid-week dinner and the leftovers make for great packed lunches. They’re also amazing as a crowd-pleaser if you’re hosting any events or gatherings (just go easy on the jalapenos!).
If you’ve not had quesadillas before, they’re a popular Mexican street food – a type of taco! Any veggies or meat are welcome in quesadillas – so if you want to make them with beef, chicken, or just veggies go ahead! My preference is turkey due to it being so lean – and delicious when seasoned properly!
How to make Healthy Turkey Quesadillas

1. Pre-heat your oven to 200C. Then Add the oil to large, non-stick pan and heat to medium/high heat
2. Add in the red onion and garlic
3. Add in the turkey mince, use your spatula to break up the big pieces and cook on medium heat until all pieces are white
4. Add in the spices
5. Stir to coat the turkey in the spices
6. Then add in the passata, and the chicken stock cube
7. Stir and mix until the stock has dissolved
8. Add in the beans and sweetcorn – stir to mix through, turn the heat to low
9. Sprinkle with jalapenos (if using) then turn off the heat
10. Next, spoon a couple of spoons of the filling onto half of a wrap (don’t overfill!)
11. Then add a pinch of grated cheese
12. Fold the wrap in half, press down gently, then slice in half
13. Repeat this, then place each of the halves on a baking tray
14. Put in the oven and heat for 15 minutes (until slightly crisp and the cheese has melted)
Turkey Quesadillas
Ingredients
- 1 Tbsp Olive Oil
- 6 Small Tortilla Wraps
- 300g Turkey Mince
- 1 Red Onion
- 2 Garlic Cloves
- 1 Tsp Ground Cumin
- 1 Tsp Garlic Powder
- 1 Tbsp Paprika
- 400g passata
- 1 Chicken Stock Cube
- 400g Black Beans
- 100g Sweetcorn (frozen or canned)
- Handful jalapenos (optional)
To Serve (Optional)
- Guacamole, sour cream, lettuce
Instructions
- Pre-heat your oven to 200C
- Line a baking tray with parchment paper (or foil) so the quesadillas don't stick to your pan
- Finely chop the red onion and garlic (I use my food processor)
- To a large, non-stick pan add the oil, and heat to medium heat
- Then add in the onion and garlic and turkey mince
- Cook until the turkey mince is white throughout (about 5-7 minutes)
- Then sprinkle over the cumin, garlic powder and paprika
- Stir to coat the turkey in the seasoning
- Reduce heat to low/medium
- Then pour in the passata and add the stock cube - stir to dissolve the stock cube
- Add in the black beans and sweetcorn -stir to combine
- Add in the jalapenos (if using)
- Then turn off the heat
- Lay the tortilla wraps on a plate, and fill halfway with the turkey filling (see above images) - do not overfill
- Sprinkle each with some cheese, then fold over and cut in half
- Place on baking tray and cook for 15 minutes
- Serve! With lettuce and your favourite dips
