This tandoori chicken salad is in heavy rotation in my kitchen at the moment! It’s so simple to make in the air fryer – today I’m using my Ninja Dual Foodi air fryer. You can make this by pan-frying your chicken or putting it in the oven too.

A delicious combination of lean tandoori chicken breast, with crunchy lettuce, cucumber tomatoes and – my favourite bit – mini poppadoms! I get my mini poppadoms from Morrisons – they’re with the sharing bags of crisps where the onion rings and prawn crackers are, but you can get them in most supermarkets. They add a really fun crunch and make this feel like such a treat.

This really is such a lovely lunch or light dinner – and you can even pop it into a naan or tortilla to make a lovely wrap if you’re feeling hungrier too!

How to make a tikka chicken salad

1. Begin by trimming the chicken breast of any excess fat, then place a sheet of cling film over it and flatten using a rolling pin so it is an even thickness (this is optional, but it helps the cooked chicken be nice bite-sized pieces when sliced)

2. Then, in a bowl add in the chicken breast, tikka seasoning or paste and yoghurt – stir to combine

3. Place the chicken breast in the Ninja Dual Air fryer (or, whichever cooking device you choose) and cook until it’s white and cooked throughout. In the Ninja it took 10 minutes on air fryer mode.

4. Whilst the chicken is cooking – cut and combine your salad ingredients and squeeze over some lemon juice. Stir to fully mix everything together

5. Once the chicken is cooked, remove it from the cooker and slice it into equal slices. It should be white and cooked throughout.

6. Then, assemble the salad! Place your salad in your dish and top with the chicken, crushed poppadoms (just crush them in your hand) and a drizzle of the yoghurt – enjoy!

Ingredients

  • Lettuce

  • Lemon
  • Cucumber
  • Red Onion
  • Peppers

You can usually find tikka or tandoori seasoning or paste jars with Indian foods or spices in the supermarket.
