Buffalo chicken strips with mac & cheese

Such an easy comfort dinner and really quick to throw together.Serves 1 (but can easily be scaled up).

Prep Time 3 minutes
Cook Time 10 minutes
Total Time 13 minutes

Ingredients

  • 4–5 chicken strips (I used the hot ones from the Aldi frozen section)
  • 1 tbsp butter
  • 1 tbsp Frank’s hot sauce (or any buffalo sauce you like)
  • 1 tsp honey

To serve:

  • Mac and cheese (let me know if you’d like my recipe for this, I use extra mature cheddar)
  • Spring onions, sliced

Instructions

    1. Cook the chicken strips as per the packet instructions (I air fried mine).
    2. While the chicken cooks, melt the butter in a small pan or microwave until just melted
    3. Once melted, turn off the heat and add the Frank’s hot sauce and honey, stir together
    4. Once the chicken is cooked, toss the strips through the buffalo sauce until nicely coated.
    5. Serve over mac and cheese and finish with sliced spring onions.
