Friday Night Fakeaway (Chilli Chicken, Egg Fried Rice & Spring Rolls)

This is one of my absolute go-to Friday night fakeaway meals – chilli chicken, egg fried rice and spring rolls, everything I’d usually order in, all made at home for a fraction of the price.

I got everything for this from Aldi and it blends a bit of shop-bought (the spring rolls and frozen chicken) with homemade sauce and rice for a really lovely dinner the whole family can enjoy.

If you’re following this week’s Planned For You meal plan, you should have leftover rice from last night’s katsu fish fingers – to make the egg fried rice with. If not, try and make your rice ahead of time, either on your lunch break or the day before. It makes a big difference to the texture!

A full Friday night Chinese fakeaway at home - chilli chicken, egg fried rice and shop bought spring rolls. Better than ordering in and so easy to pull together.

Ingredients

  • Frozen chicken chunks (I use Aldi)
  • 1 red pepper
  • 1 green pepper
  • 1 red onion
  • 2 spring onions, chopped
  • 2 garlic cloves, minced
  • Shop bought spring rolls
  • Oil for frying

For the chilli sauce:

  • 3 tbsp sweet chilli sauce
  • 1 tbsp soy sauce
  • 1 tsp rice wine vinegar
  • 2 tbsp water
  • 1 tsp cornflour

For the egg fried rice:

  • 2 portions of cooked long grain rice (cold leftover rice is best)
  • 1 egg, beaten
  • 1 tbsp dark soy sauce (I use Lee Kum Kee)
  • 1/2 spring onion, finely sliced
  • 1 garlic clove, minced
  • 1 tbsp neutral oil

To serve (Optional)

  • Spring onions over the top
  • Sweet chilli sauce in a pot to dip

Instructions

  1. Cut all the veg into bite-sized pieces and mix together the chilli sauce ingredients in a small bowl and set aside.
  2. Air fry the chicken chunks and spring rolls as per packet instructions, taking the chicken out 1 minute early.
  3. While everything is in the air fryer, make the egg fried rice - heat the oil in a pan, tip in the cold cooked rice and break it up. Let it heat through for a minute, pour over the dark soy sauce and stir through.
  4. Make a well in the rice, pour in the beaten egg and let it softly scramble before mixing through. Add the garlic and spring onions, stir through and cook for one final minute. Set the rice aside.
  5. In the same pan, heat a little oil on high and fry the onion for 2 minutes, then add the rest of the veg and cook for 1 minute more.
  6. Pour in the chilli sauce, then add the cooked chicken straight in and toss to coat everything. Add a splash more water if needed.
  7. Serve everything in the middle of the table and help yourself, or plate up the chilli chicken alongside the egg fried rice with the spring rolls on the side.

Notes

Cold leftover rice is key - if you're following the Planned For You meal plan you should have some left from last night's katsu curry. If not, cook it the day before or on your lunch break. Using the same pan for the rice and then the sauce saves on washing up too. Spring rolls go in the air fryer at the same time as the chicken so everything is ready together.
