Cheesy Chipotle Tuna Melt

Ingredients
- 1 tin no-drain tuna
- 1 spring onion
- 1/4 red onion
- 1/4 red pepper
- Handful of sweetcorn
- A couple of jalapeños
- 2 tbsp mayo
- 1/4 tsp chipotle paste
- Grated cheese
- 2 slices of bread
- 1 tbsp mayo + garlic butter seasoning (for the outside)
Instructions
- Finely chop the spring onion, red onion, red pepper, sweetcorn and jalapeños
- In a bowl, mix the tuna with the chopped veg, mayo and chipotle paste
- Lightly toast the inside of your bread (or both sides if you prefer)
- Layer grated cheese, the tuna mix, then more cheese, and close the sandwich
- Mix mayo with a little garlic butter seasoning and brush onto the outside of the bread
- Fry in a pan over medium heat until golden and crispy, flipping once, or air fry until crisp and melted
