Very Easy Chilli Chicken

An easy chilli chicken recipe made using frozen chicken chunks.

Ingredients

  • Chicken chunks (I use frozen ones from Aldi)
  • 1 red pepper
  • 1 green pepper
  • 1 red onion
  • 2 spring onions
  • 2 garlic cloves

Sauce:

  • 3 tbsp sweet chilli sauce
  • 1 tbsp soy sauce
  • 1 tsp rice wine vinegar
  • 2 tbsp water
  • 1 tsp cornflour

Instructions

    1. Air fry the chicken as per packet instruction, minus 1 minute as it’ll cook a bit more in the pan
    2. Cut all the veg into bite sized pieces
    3. Heat pan to high heat with a little oil then add the onions
    4. Fry onions for 2 mins then add the rest of the veg ingredients and cook for 1 min more
    5. Pour in the sauce
    6. Then instantly pour in the cooked chicken- stir to coat it all, add a bit more water if needed (like a tbsp more)
    7. Serve and enjoy!! I served this with egg fried rice
