Easy Potato Salad Recipe

This is my go-to easy potato salad recipe. For years I’ve been making potato salad using store bought soured cream and chive dip as it has a nice base of flavours, skips more prep and is a good price too.

This is a classic style potato salad with spring onions, mustard and that creamy base! A lovely summery side dish to a bbq or picnic.

1. Begin by washing and then boiling your potatoes. Once they’re cooked, drain and allow to steam dry

    2. Then mix together the dressing ingredients

    3. And mix the dressing with the warm potatoes! Serve cold or warm.

    One of my favourte, easy potato salad recipes using shop bought soured cream and chive dip.

    Prep Time 2 minutes
    Cook Time 15 minutes
    Additional Time 2 minutes
    Total Time 19 minutes

    Ingredients

    • You’ll need:
    • 500g baby potatoes
    • 3 tbsp soured cream & chive dip
    • 1 tsp Dijon mustard
    • 2 spring onions, finely sliced
    • Salt and black pepper

    Instructions

      1. Boil the potatoes in salted water for 12–15 minutes until tender.
      2. Drain and leave to steam dry for 5 minutes.
      3. Mix the dip, mustard, salt and pepper.
      4. In a large bowl, mix together the dressing and potatoes whilst still slightly warm
      5. Serve warm or chilled

    Notes

    You can easily scale this recipe to serve as many as you'd like - just do more potatoes!
