This week KFC have launched a new garlic and parmesan sub, made up of a sub roll with 2 mini fillets and garlic and parm sauce – and of course, we have to create this at home, but better! You all know I love a fake-away, and honestly, this one is giving me Chicken Legend vibes.

To make it, we’re shallow frying chicken breasts in a light batter coating then stacking with garlic mayo, parmesan and lettuce – it’s super easy, delicious and filling. I served mine with skin on fries today.

The KFC ones have the fast-food style cheese slices on, I’ve decided to add some cheddar on mine too, bu that’s totally optional! I’ve added details of the ingredients I’ve used in the recipe cards below!

How to make a KFC-style Garlic Parmesan Chicken Sub at home:

1. Pop your chicken breast into a sandwich bag and bash it flat with a rolling pin until it’s an even thickness. This helps it cook evenly and makes sure it’s the right shape for a sub (not too thick!)

2. Take two bowls, and in one, crack and whisk an egg. Into the other, pour in the fried chicken batter mix.

3. Dip the chicken into the batter mix, then egg, then batter mix again – until evenly coated.

4. Heat veg oil in a pan then shallow fry the chicken for 4-5 minutes per side until golden and cooked through.

5. Slice your sub roll, spread generously with garlic mayo, add the lettuce, the crispy chicken, more garlic mayo, optional cheddar and a good grating of parmesan

Garlic & Parmesan Chicken Subs (KFC Style)

KFC Style Parmesan Garlic Subs

A homemade version of KFC's new Garlic Parmesan Sub — crispy fried chicken, garlic mayo and parmesan in a toasted sesame sub roll. Ready in 20 minutes and honestly better than the real thing

Ingredients

  • 1 sub roll
  • 1 chicken breast
  • 1 egg, beaten
  • Fried chicken coating mix (available in most supermarkets)
  • 2 tbsp garlic mayo, plus extra to serve
  • Parmesan, grated, to serve
  • Cheddar, grated (optional)
  • Handful of lettuce
  • Vegetable oil, for frying

Instructions

  1. Pop your chicken breast into a sandwich bag and bash it flat with a rolling pin until it's an even thickness. This helps it cook evenly and makes sure it's the right shape for a sub — not too thick!
  2. Take two bowls, in one, crack and whisk your egg. In the other, pour in the fried chicken coating mix.
  3. Dip the chicken into the coating mix, then the egg, then back into the coating mix again until evenly coated all over.
  4. Heat a good glug of vegetable oil in a frying pan over a medium-high heat. Shallow fry the chicken for 4-5 minutes per side until golden, crispy and cooked through.
  5. Slice your sub roll in half. Spread the bottom generously with garlic mayo, add the lettuce, then the crispy chicken.
  6. Top with more garlic mayo, grated cheddar if using, and a generous grating of parmesan. Serve straight away with fries.

Notes

I couldn’t find sesame seed subs anywhere, so I bought normal subs from Morrisons, brushed them with a little melted butter, scattered over some sesame seeds and air fried for 1 minute. You could absolutely skip this though and just use normal subs, or seeded burger buns if that’s easier!
