Actifry Mexican Wedges

These Actifry wedges are seasoned with Mexican spices and lime juice for an irresistible side dish or snack – perfect dipped in guacamole and sour cream. 

Thick cut potato wedges are perfect for this recipe as the soft fluffy center is the perfect contrast to the zingy coating.

How to make Mexican Potato Wedges in the Actifry

1. Chop the potatoes into wedges (i tend to cut the potato in half lengthways, then into 3)2. Put the wedges in the Actifry, paddle in, with oil, and cook for 15 minutes 
3. Whilst the wedges are cooking, chop an onion (red or yellow) into strips 
4. And mix together the spices with the juice of a lime 
5.. Once the wedges have cooked for 15 minutes add in the onions, close the lid and cook for a further 3 minutes6. After 3 minutes, add in the seasoning 7. Cook for a final 5 minutes – or until the wedges are cooked

Zingy Mexican potato wedges made in the Actifry - with lime and chilli.

Ingredients

  • 4 Maris Piper Potatoes
  • 1 Tbsp Oil
  • 1 Onion (red or yellow)
  • 1 Lime (or 2 tbsp lime juice)
  • 1/2 tsp paprika
  • 1/2 tsp onion granules
  • 1/4 tsp cumin
  • 1/2 tsp chilli flakes (optional)

To Serve

  • Coriander leaves (Optional)
  • Guacamole & Sour Cream (Optional)

Instructions

  1. Cut the potatoes into chunky wedges (I tend to cut in half, then each half into three)
  2. Place the potatoes into the Actifry (paddle in) and add the oil
  3. Cook for 15 minutes
  4. Whilst the potatoes are cooking, slice the onion into thin strips
  5. Then mix together the paprika, cumin, chilli, onion granules and lime juice
  6. After the 15 minutes cooking time is up - add the onions into the Actifry and cook for 3 minutes
  7. After 3 minutes, add in the seasoning and cook for a further 5 minutes (or until the wedges are cooked)
  8. Serve topped with coriander, with guacamole and sour cream (optional)
